Required Skills:
• Must be 18+
• Previous experience in leading a team (Minimum of 1 year experience required)
• Previous professional baking experience (Minimum of 1 year experience required)
• High ethical standards with personal integrity
• Detail oriented, able to multi-task and remain flexible to the changing needs of the business
• Strong critical thinking and problem-solving skill
• English proficiency. Strong organizational and communication skills (spoken, listening, & written)
• Ability to meet deadlines and coordinate projects
• Demonstrated objectivity, neutrality, and calmness under pressure and timely follow-through to commitments
• Regular, predictable attendance

Physical Demands:
• Ability to lift/push/pull/carry 50+ pounds regularly
• Manual dexterity with ability to reach, grasp and perform repetitive motions with hands, wrists, and fingers for extended periods of time
• Mid-to-general range visual acuity to evaluate and interact in working environment and operate production kitchen equipment for extended periods of time
• Ability to stand and walk for extended periods of time
• Constant exposure to working in refrigerated/frozen and hot/humid environments
• Ability to climb ladders, kneel, crouch, and bend occasionally required
• Ability to be exposed to, work with a variety of ingredients
• Ability to work safely with cooking equipment and sanitation supplies
Preferred Skills:
• Previous experience in retail, wholesale, natural foods and/or related industry
• Forklift certification

Job Description:
Operations

• Partner with Food Production Operations Manager to prioritize and ensure the operational success of the production kitchen
• Keep accurate shrinkage/waste/recipe records
• Ensure that baking tools, utensils, and equipment are properly cleaned and sanitized according to standards
• Follow all HAACP plans and procedures
• Train staff to produce high-quality bakery items while following all proper food handling procedures
• Ensure the kitchen is adequately stocked with quality, up to date, gluten free baking ingredients and supplies

Baking, Quality and Consistency

• Measure and mix ingredients to form dough and/or batter, using Hobart mixer, which may at times include beating and/or stirring ingredients by hand
• Work with proof box and commercial size rack oven
• Frost and pipe cakes/cupcakes
• Ensure products are produced exactly to recipe and according to established standards
• Master and use all commercial equipment necessary in the recipe/baking process

Food Production

• Oversee and coordinate daily production lists – to ensure daily production is completed on time
• Ensure efficient and productive shifts for all staff in the kitchen
• Train and lead staff daily by setting productivity expectations
• Work cooperatively with Bakehouse Operations Manager to establish pars and maintain pars
• Assist with recipe development following pricing and production
• Keep work areas clean in compliance with all local, state and federal regulations

Leadership and Communication

• Participate in on-the-job training of new employees, helping to ensure they are properly trained
• Provide on-going feedback for employee performance to Food Production Operations Manager
• Take an active role in coaching employees to success in their job by using effective communication
• Find Coverage for shifts vacated due to absence/illness. Cover shift if not replacement is found.
• Ensure the department operations are running efficiently
• Proactively and continually seek and implement innovative solutions to increase quality, value, service and efficiency for our staff and operational goals
• Treat people with dignity and respect and behave ethically with integrity; tolerate no less from others
• Consistent and clear communication with Food Production Operations Manager (i.e. facilitate daily huddles, weekly check-ins).

Safety and Compliance

• Alert Food Production Operations Manager of potential emergencies
• Ensure prompt reporting of any staff injuries
• Ensure dishes are clean according to established guidelines
• Clean up spills immediately and take trash out as needed, including after shift
• Maintain work in sanitary and orderly condition following guidelines set by the Food Production Operations Manager
• Open and close the production kitchen according to checklist standards
• Keep production kitchen equipment in working order and advise Food Production Operations Manager of equipment problems
• Ensure SOPs are up to date.
• Ensure safety concerns are addressed with Food Production Operations Manager.
• Attend staff meetings and other assigned training requirements
• Perform other duties as assigned by Food Production Operations Manager
